Sous Chef is the mild organic olive oil built for the hot kitchen: sautéing, roasting, braising, pasta, vegetables – all the heat-intensive cooking where you want the ingredients to speak, not the oil. The Koroneiki olive from the Messenia region on the Peloponnese is one of the most flavourful oil varieties in Greece, and Sous Chef draws out exactly its delicately fruity side – the part that survives the heat.

Partner Ilias has farmed his groves in Andania organically for over 30 years. Olives are harvested by hand during the day – Bird Safe, no mechanical night harvest, no sleeping birds harmed. Immediately after harvest, cold extraction by decanter centrifuge at under 27 °C, instantly bottled in UV- and temperature-insulating containers to preserve every valuable compound. The 500 ml glass bottle has a practical dosing spout and can be refilled later using the 1-litre tin canister.

Who is Sous Chef in the glass bottle the right gift for?

What is the difference between Sous Chef and Flüssiges Gold?

Both oils come from the same region – Andania, Messenia – and are made from 100 % Koroneiki olives. Sous Chef is deliberately mild and delicately fruity, ideal for the hot kitchen because it supports rather than overwhelms the ingredients. Flüssiges Gold is intense, aromatic, unfiltered and naturally cloudy – a finishing oil for salads, dressings and drizzles, enjoyed cold.

Can you really cook with olive oil?

Yes – this persistent myth has been disproved. Extra virgin olive oil is heat-stable up to around 180 °C, which is more than sufficient for sautéing vegetables, fish, meat or pasta. The high content of monounsaturated fatty acids (73.6 g per 100 ml) makes it particularly stable under heat. The Cretan diet, long regarded as one of the healthiest in the world, was built precisely on this principle.

What does Bird Safe mean at O.E.L. Berlin?

Bird Safe means all olives are harvested by hand during daylight hours – no mechanical night harvest during which sleeping birds in the groves can be killed. The groves in Andania are farmed using traditional organic methods; no creature larger than a fingernail is harmed during harvest. This is not a marketing phrase but a concrete farming practice.

Can I refill the glass bottle later?

Yes, the glass bottle is explicitly designed to be refilled. O.E.L. Berlin offers the 1-litre tin canister for this purpose, which is airtight and light-proof with a recycling rate of 91.1 % – significantly higher than glass (83.4 %). The refill concept saves packaging and keeps the beautiful bottle on the counter.

What does “cold-extracted” mean and why does it matter?

Cold extraction means the olives are processed after harvest using a decanter centrifuge at under 27 °C. This temperature limit is legally required for the “extra virgin” designation and protects the valuable polyphenols, vitamins, and aromas. A higher processing temperature would yield more oil from the olive, but would significantly degrade the quality of the compounds that make a great oil great.

Where exactly does the oil come from, and why Andania?

Andania is a small village in the Messenia region on the Peloponnese, near Kalamata – Greece’s most important olive-growing area. The rocky, intensely hot and dry landscape puts enormous demands on Koroneiki olive trees and their farmers, producing fruit with exceptionally aromatic and low-bitterness characteristics. Partner Ilias has been farming organically here for over 30 years with his own mill on site.
